Yummy yummy yummy! This was a major hit tonight. We all loved it and there were no leftovers. I smile when there are no leftovers. Especially tonight because after all of the food prepping I did there was no room in the fridge for anything else. Will post on that later.
Quick Pizza Chicken
- Chicken breasts (pounded out or thinly sliced)
- Panko bread crumbs
- Pizza sauce (I always make my own)
- Shredded mozzarella cheese
Trim up chicken breasts so there is no remaining fat. Dip each breast into egg mixture (hehe, ahem sorry). Dredge each chicken breast through the panko bread crumbs and place them onto high sided baking dish. You could use a cookie sheet for this, but I have come to realize that baking chicken in a high sided dish versus a baking sheet results in moister chicken. I always use my Pampered Chef stone baking dish, but you could cover any dish with foil for easy clean up.
Baked at 425, for about 20 minutes or until chicken is cooked through and no longer pink. Top each breast with a few spoonfuls of your pizza sauce and the shredded cheese. Bake for another 5 minutes or so, until the cheese is melted.
This is hardly a “recipe”, more like an idea. Hence the no measurements. I didn’t measure anything. I cooked 4 breasts, used 2 eggs, and about a cup of panko bread crumbs on a plate. I used about 1/2 cup of the sauce and probably 1/4 of cheese. You could put lots more on there if you’d like, we are just trying to cut back and this meal felt light enough. I served it with broccoli and green beans.
