I am going to brag on myself for a minute. Most of my recipes are inspired by other recipes. I read it, want to try it, and then recreate it in my own kitchen. HOWEVER, this recipe came to me in my head, and I totally made it up from start to finish.
I am pretty proud of myself, can you tell?
Sausage & Peppers:
Sausage links (I used hot italian)
1/3 cup chicken broth
2 Tbs Fajita seasoning
2 Tbs olive oil
Add olive oil to skillet (with lid) on medium high heat. Once oil starts to shimmer, place sausages in skillet. Brown sausages on both sides turning every few minutes. They will not be cooking all the way through, and remove from skillet. To pan, add sliced peppers and onion. Toss all veggies to coat with the oil. Add in fajita seasoning, and chicken broth to skillet and cover with lid. As veggies become tender, add sausages back into skillet and cover. Allow to cook throughout, about 6-8 minutes. If you like slightly crunchy veggies add sausages in right when you cover so they will cook and veggies will not become mushy.

My husband loved this!!! That really makes me happy considering I made it up all by myself! He asked for it for lunch tomorrow, and asked me to make it next week.
