Started off with the picture of these sweet babies because they were so pretty. I wanted to do something different than the typical cupcakes and cookies for my little tikes Halloween party at school. Mini muffins? I think so.
The pumpkin made them naturally orange too, so they fit the occasion with no added food coloring.
1 can (15 oz) pumpkin puree
1 box of white cake mix
1 cup chocolate chips (I used mini, and only about 3/4 cup)
1/3 cup applesauce, I used plain but cinnamon would be great.
Mix cake mix, pumpkin puree, and applesauce together in mixer. Add in chocolate chips. Put into muffin tin, large or mini, either one.
I made mini’s, baked at 350 for 11 minutes. Larger muffins will obviously take longer, about 14-15 minutes.
They were toddler and hubby approved.
