This past weekend I did a ton of prep work to help me get through this week as quickly and efficiently as possible. This coming weekend my mom and I are running a half marathon, so we will be busy this week preparing for that. I want to still be able to get hot healthy meals on the table for my family, but have time to log some last-minute miles.
Monday: Crispy Parmesan Chicken Strips with garlic roasted broccoli and black beans
Tuesday: Golden Chicken Enchiladas
Wednesday: Mexican Pizzas
Thursday: Teriyaki Dump chicken
Friday: Meatloaf (made this weekend)
