Spicy Garlic Shrimp

I love shrimp, and I mean really love shrimp.  I will eat shrimp in just about any way it is presented to me.  I saw Ree Drummond on Pioneer Woman and was inspired by her shrimp recipe.  I like doing shrimp in the oven because I feel like it turns out perfect every time.  Shrimp is so easy to over cook on the stove top.

Spicy Garlic Shrimp:

Ingredients:

1 pound shrimp, I prefer peeled with tail on, but you can really use whatever is on sale that week)

1/2 stick of butter

2 tbs parsley (fresh or dry, I used fresh, curly leaf, but it really doesn’t matter much)

1-2 tsp crushed red pepper flakes (depending on hot spicy you like it)

2-3 garlic cloves

pinch of salt

pinch of pepper

In a small food processor mix cold butter, parsley, garlic, red pepper flakes, salt and pepper.

Line a baking sheet with tin foil, for easy clean up, preheat oven to 400.  Lay shrimp out in a single layer, then crumble butter and garlic mixture over the top of shrimp.  The oven will melt this mix all over your shrimp and bake the flavor right in.  Bake for about 8 minutes until pink and opaque.

  1. How long do you cook it?

    • Whoopsie Forgot that part, it may be important. I had large shrimp, so about 8 minutes was plenty. If you get xlarge shrimp probably 9-10 minutes. Cook until pink and opaque.
