This couldn’t be any easier really. I found this big chunk of meat for HALF OFF at Kroger one night and couldn’t pass it up. Anything in the slow cooker is easy but sometimes recipes call for searing prior to starting the slow cooker, and I just don’t have time for that. This dish has zero prep, just unwrap, drop and go.
Slow Cooker Boston Butt:
- 3lb boston butt, or pork shoulder roast
- 1 package beefy onion soup mix (regular onion soup mix would be fine too)
- 1 cup ketchup
- 1 cup light brown sugar, 3/4 cup if you want to tone down the sweet
- 1/3 cup apple cider vinegar
- 1/2 cup apple juice
Place meat in cooker, mix all other ingredients. Pour over roast. 4 hours on high, or 8 hours on low. Shred meat with two forks, then mix up with sauce for another 10 minutes or so just to be sure that every piece is coated.
You can make these sammies by putting them on buns, eat it plain with some baked beans and coleslaw, or even put it into a wrap with lettuce, or slaw.
