I am posting this a day early this week since I’ve planned for Sunday. I actually cooked the Crockpot pork butt on Saturday, but we were just too busy to eat it. So I packed it up for Sunday’s supper. I cannot wait to eat it because it was so yummy. I will also be doing a lot of prep work today for this weeks meals such as roasting many chicken breasts, making my pizza dough plus extra to freeze, and totally prepping the golden chicken enchilada and freezing it so I just have to pop it into the oven when I get home.
Sunday: Crockpot shredded pork sammies
Monday: Chipotle Salmon with roasted brocoli
Tuesday: Chicken Enchilada Ring
Wednesday: Golden Chicken Enchiliada
Thursday: BBQ Chicken and Black Bean Pizza (Weight Watcher Friendly)
Friday: White Chicken Chili
