Glazed Poppy Seed Bread

This should really be called Poppy Seed Cake.  The texture and taste is much more cake-ish than bread-ish.  Just wanted to give you a heads up this is not a spaghetti type bread, it is more coffee or ice cream type bread.

Ingredients:  (Bread)

  • 3 C Flour
  • 2 1/2 C Sugar
  • 1 1/2 t Salt
  • 1 1/2 t Baking powder
  • 1 1/2 T Poppy Seeds
  • 1 1/2 C Milk
  • 1 C + 2 T  Vegetable Oil
  • 3 Large eggs
  • 1 1/2 t Vanilla
  • 1 1/2 t Almond Extract

Glaze Ingredients:

  • 3/4 C Sugar
  • 1/4 C Orange Juice
  • 1 /2 t Vanilla
  • 1/2 t Almond Extract
  • 2 t butter, melted, and cooled

Preheat oven to 350. Spray TWO loaf pans with non-stick cooking spray. Set aside.

In bowl or stand mixer combine all dry ingredients.  Stir until combined.  In a separate bowl, combine the remaining bread ingredients,  milk, oil, eggs, vanilla, and almond extract.  Slowly add the wet ingredients to the dry, and mix.  Increase speed, and beat for one minute.

Pour batter into prepared loaf pans, and bake for 1 hours and 5 minutes, or until knife comes out clean.  While bread is baking combine all glaze ingredient and mix evenly.

Once bread is done immediately brush glaze over the hot bread.  It will seem like a lot of glaze, but it will soak into the bread to keep it super moist.  It also creates a sugary crisp glaze on top.  Cool for about 20 minutes, run a knife along the edges to separate and remove from pans.  YUM Cannot wait to eat these tomorrow.
