7 Minute Pork Loin

Yes, only 7 minutes.  I was informed by a friend this weekend about cooking a pork loin in the microwave.  My first though, umm eew.  I WAS SO WRONG!  I broke out my deep covered baker, from Pampered Chef, and that was really the hardest part.  There is no need for an ingredient list really.  All you need is your pork loin, and whatever you want to rub on it.  No liquid is needed to cook this loin of oink.Image

I didn’t put the spice mix in the picture, I used Pampered Chef Southwest seasoning rub.  You can really use anything.  I cooked mine for 8 minutes, then let it sit for 10.  Next time I will cook it for 7 minutes, then sit for 10.  It was still super juicy, and yummy.  Just be sure to temp check it with a meat thermometer. Pork should be at 150, then once it has set for 10 minutes, covered in the baker, it will read 160.
